Ingredients

1 lb. peeled and deveined shrimp
1 small red onion
2 roma tomatoes, concassed and diced
half of red, green or yellow sweet bell pepper, diced
2 scallions, sliced
1 cup mango chunks (can use frozen) or one fresh mango, chopped
1 t. ground cumin
1/2 t. natural sweetener
2 T lime juice
1 T cider vinegar
1 T finely chopped cilantro
Salt and pepper to taste
1 avocado, diced

Instructions

1. Heat oven to 375. Arrange shrimp on foil lined, baking sheet. Season with salt and pepper, bake for 12-15 minutes. Set aside and cool.
2. Add the onion, tomatoes, bell pepper, scallions and mango to a bowl. Dice the shrimp and add to bowl. Mix.
3. In a separate small bowl, combine cider vinegar, lime juice, and sweetener. Add to bowl. Season with Cilantro, Cumin and Salt and Pepper to taste.
4. Serve with Tortilla Chips and avocado (or guacamole) on side.
