Ingredients
4# Mushrooms, they shrink – look for about 1” diameter, not too small though
1/4c brown sugar
1-1/4c sugar
2tsp celery salt
1tsp onion powder (ala Red Ox)
1tsp paprika, optional (ala Red Ox)
2oz. (1/4c) Lawry’s Seasoned Salt
2 beef stock cubes
1-3/4 Cup red wine vinegar
2-1/2 bay leaves
2tsp garlic powder
3-4 Cups water
Instructions
Blanch the mushrooms for about 7 minutes on stove top and plunge into ice water for 14 minutes.
Put mushrooms in jars (about 6 pints).
Cook all ingredients until sugar is absorbed. Poor over mushrooms and seal.
Refrigerate for about 2 weeks before eating.
